On the Menu of Any Korean Feast, “Japchae”

The Harmony of Chewy Sweet Potato Noodles,
Vegetables, Beef, and Soy Sauce

A bounty of foods on a holiday table would put anyone at a loss, “What dish to start from?” But the majority of Koreans won’t hesitate with the answer, “Of course, japchae.” This representative Korean feast food is made by stir-frying sweet potato noodles (dangmyeon) with thinly sliced carrots, onion, spinach, mushrooms, and beef; and seasoning with soy sauce. The chewy, sweet and salty taste of the dish appeals to both Koreans and foreigners alike. This was proved once more at the Davos Forum held in Switzerland last January. At the event, a famous chef, Edward Kwon, received favorable evaluations for cooking a new style japchae roll with caviar in soy sauce. Japchae also captivated the taste buds of gourmets at the 2012 Madrid Fusion Festival where Korea participated as a guest of honor. Let’s prepare dinner as a bountiful feast, with a food so much enjoyed by foreigners - japchae.


Cooking  Tips

 

 


The key point of japchae is chewy sweet potato noodles. To make the noodles chewy, blanch them in boiling water with salt until they are about 80 percent ready. The same is recommended for spinach. Salt is essential when blanching green vegetables because without salt, they can lose the vivid green color and some nutrition such as vitamin C. To make your japchae taste even better, you can add mushrooms, paprika, seafood, and chili peppers.


How to Make Japchae  (Four Servings)

 

 

 


Main Ingredients: 100g beef, 100g sweet potato noodles, 4 shiitake mushrooms, 5 tree ear mushrooms
Sub-ingredients: 1/2 cucumber, 1/2 carrot, 1/2 onion, 1/2 green onion, 3T oil, 3T sesame oil, 1T sugar, sesame mixed with salt, salt, soy sauce
Sauce for meat: 1/2 green onion, 2 pieces of garlic, 1T soy sauce, 1/2T sugar, sesame oil

1. Blanch spinach, remove water, and season with salt.

2. Blanch sweet potato noodles and drain through the colander.

3. Cut onions, carrots, and other ingredients into thin strips and fry.

4. Cut beef in the same size pieces as the vegetables and season with meat sauce made by mixing the green onion, garlic, soy sauce, sugar, and sesame oil.

5. Put oil into a frying pan and fry sweet potato noodles with soy sauce, sesame oil, and sugar.

6~8. When the sweet potato noodles are done, add other ingredients, and the dish is ready!
