Aromatic Taste of the Sea, “Sea Urchin Eggs”

The consumption of caviar, widely used as an
ingredient for haute cuisine, has been decreasing lately
due to a drop in production. Besides, caviar is so expensive that usually only the higher classes can afford to eat it. For this reason many buyers and chefs are looking for a fish egg
alternative to be used as an ingredient instead of caviar.

While caviar represents the best quality fish eggs in the West, sea urchin eggs are definitely the top fish eggs in the East. Originally, sea urchin eggs were native to both Korea and Japan, but now they are only produced in Korea. Compared to caviar, sea urchin eggs of the East are smaller in size but similar in texture and quality. What’s more, sea urchin eggs are more reasonably priced than caviar, so many more people can enjoy eating them. Yet another merit is that the Eastern fish eggs can be used as an ingredient for gourmet food as well as for simple dishes like sandwiches, sushi, and pasta.
Thus it comes as no surprise that Korean sea urchin eggs have been actively exported to overseas markets such as Japan.

Bosung Trading Co., Ltd. produces raw sea urchin eggs, frozen sea urchin eggs, pickled sea urchin eggs, and canned sea urchin eggs. Among these, the raw and pickled eggs are the main export items.
The raw sea urchin eggs are supplied to Tsukiji Market (Japan’s largest market of marine products) in Tokyo during the main production season between May and August. Pickled sea urchin eggs reach the markets in Shimonoseki and Fukuoka as semi-processed foods. A 40-year history of supply to over 30 Japanese buyers is the best evidence of the trust that Bosung Trading Co., Ltd. has earned with its partners.
Due to the nature of processed marine products, sanitation is a very important aspect of production. Bosung Trading Co., Ltd. closely supervises sanitary control in all its facilities. The canned sea urchin eggs are an item developed specifically for the purpose of market expansion. They can be stored for up to three years without any change in the unique, original taste. This year, the products of Bosung Trading Co., Ltd. have entered global markets under the brand name “Sea-Tree.” A Taiwanese buyer has recently approached the company with a business offer because he believes importing canned sea urchin eggs has a good potential.
Mr. Yoon says, “more people should have an opportunity to eat fish eggs, irrespective of their wealth. Soon, foreign consumers will enjoy Korean sea urchin eggs in various dishes, such as canape to go with wine, and pasta with sea urchin eggs.”
