The summer strawberry of Daegwallyeong is harvested from June to early December. Unlike winter strawberry, the summer kind is for baking and cooking rather than eating raw. So summer strawberry should be sweet and sour, firm, and glossy. Daegwallyeong summer strawberry is then the best strawberry for baking.
The breed cultivated is called ‘flamenco’ - from England - because it is suitable for baking. It is cultivated in green houses using a cutting edge temperature controlling system. Through all the distribution steps the strawberries are moved in the low temperature system and the sorting is done in a strict manner. People on the farms first sort the strawberries and put them in cold storage. Cold chain system trucks visit the farms three times a day to move the strawberries to the sorting place. Strawberries are then sorted again and divided into seven grades. Finally, before export the fruits are sorted one more time.
At every stage in the moving and sorting process the strawberries are under the cold chain (storage) system ensuring the best quality of the fruits. The shape of strawberries is conical, the color shiny red, they are very good for decorating cakes. And as they are sour and firm they can be kept for a long time.
Presently, all the strawberry produce is exported to Japan, but buyers from Southeast Asian countries also showing interested in Korean strawberry. Also, the signing of contracts by All One Korea and buyers in Taiwan is ongoing.
