Health Food from the Sea, Maesaengi
Gim (dried laver) has been becoming popular in Japan and Russia as a health food, but Enzon has made it even tastier by adding maesaengi (seaweed fulvescens). Enzon is a company that has the technology to extract sea chlorophyll from maesaengi. It has developed ‘maesaengi gim’ that comprises maesaengi and seasoning. Maesaengi has been irregularly exported to Japan since the last year but the company has recently started to regularize its export in earnest. With monthly export the total amount for a year is estimated to be USD 0.45m.
Maesaengi contains lots of iron, iodine, vitamins A and C, food fiber and sea chlorophyll, so it is good for growing children. It has 39 times more potassium than brown seaweed and 18 times more kelp so it is good for pregnant women. If the growing environment is not perfectly clean the crop will be faulty so it can be harvested only in the winter time from December to the next February. The best cultivation areas in Korea are found in Wando, Jangheung, Goheung, and Gangjin in Jeollnam-do.
The first steps to making the product are desalination, quick freezing at 40℃ for 18 hours, and vacuum drying at a low temperature. This is followed by grinding the dried maesaengi and then coating with a small amount of sesame oil because if it is too much it will affect the maesaengi’s fragrance and taste. One difficulty the company had to face was that as maesaengi is thinner than a silk string it is harder to mix with laver; but finally a way was found to grind and coat the laver gim.
A general director of Enzon, Jung hwa-soo, said: “The maesaengi gim of the company contains 6% of maesaengi. Eighteen grams of maesaengi gim contains 1.1 grams of maesaengi, and it seems too small. However, compared with fresh laver and maesaengi as ingredients, the 60% ingredient of maesaengi gim is maesaengi.” He added: “Maesaengi is very nutritious so it can be called the representative health food from the sea.”
Enzon won a prize from the Korean Federation of Small and Medium Businesses and it also received an award for new technology from the Busan-si office.
